The Damascus knives of the Wakoli "Edib-Series" belong to the sharpest knife series in the world! This is ensured by the manual grinding, which is performed on both sides at an angle of 15 °. Best balanced and with ergonomically shaped handle, the fillet knife is comfortable to use!
Fillet and boning knife
The filleting knife is perfect for filleting and cutting meat and fish and for all fine cuts. Thanks to the razor-sharp, narrow blade, this knife offers a perfect "curve behavior" even for longer cuts, for example, to separate meat from the bone.
Each damask knife is unique
The blade with 14.50 cm length is made of 67 steel layers of original Japanese Damascus steel reaches a hardness of 60±2 HRC. These steel layers were wound several times, which makes the structure of different layers each knife a unique product.

Our knives combine traditional craftsmanship with modern Asian forging. The perfectly matched combination of different raw materials thus creates a unique product that is extremely hard and thus remains sharp longer. Packaging: double and triple, outer packaging too large. Too much waste. Well protected, therefore served its purpose well. Inner box/case made of cardboard + inner color-printed outer packaging + exactly matching anonymous outer packaging + large unsuitable cardboard box with filling material (at least paper, not plastic).
The knife was a gift, but I put it through its paces beforehand. Very handsome, precisely finished, very pleasant to handle, well balanced in the hand. Looks almost delicate, but still sturdy. Very fine grain, high-quality handle and visually elegant. I already have several Damascus knives myself, but no filleting version (I am not an angler/hunter). At least on a par with my high-quality knives.
Hellishly sharp and very pointy, made the recipient's mouth water :-) (not dangerous). Cuts at the highest level. Slightly flexible blade due to the slim shape, not very strong. I know it from ham knives (which it should not be!) much more flexible. So perfect for its intended use.
The recipient is an angler and found it extremely suitable, high quality and perfect for filleting larger freshwater fish. He was very pleased about the injury because it was supposed to be super sharp. Is a very experienced user and was still surprised!
