The Santoku knife from the Olive HS series is the favorite of many chefs as a light, flexible knife for pressure cutting. Its name (San = three, Toku = virtues) is a reference to its perfect qualities for cutting meat, fish and vegetables.

Modern Asian blacksmithing

The blade with 17 cm length and black hammer finish is made of 67 steel layers of original Japanese Damascus steel with VG-10 steel core and reaches a hardness of 60±2HRC. These steel layers were wound several times, which makes the structure of different layers each knife from the Wakoli collection a real unique . Our knives combine traditional handwork with modern Asian forging art. The perfectly matched combination of different raw materials thus creates a unique product that is extremely hard and thus stays sharp longer.
