Peaches with amarettini crust

Today now the conclusion of our little barbecue series with Camillo from Don Caruso BBQ. And this time there is a fruity-sweet dessert. A dessert that somehow everyone likes. Peaches with Amarettini crust. Who is not watering in the mouth?

You need:

  • 150g Amarettini cookies
  • 75g shaved manadels
  • 80g butter
  • Juice of half a lemon
  • 1 egg yolk
  • 4 large peaches
  • Vanilla ice cream, whipped cream, honey and lime zest for serving

Preparation:

Put the amarettinis in a bowl and crush them, add butter, lemon juice, egg yolk and almonds. Then knead the whole thing until you have a solid mass. Cut the peaches in half, remove the pit (if the peaches are firm so that you can not get the pit out without crushing the fruit, just cut off the head ;)) and press a "cap" of the mass on the cut surface.

Indirectly grill at about 180*C biting crust golden brown and the peach is soft ( about 15-20 minutes).

To serve, "decorate" vanilla ice cream with honey and lime zest, add peach and add some cream at the end.
